  • King Cake

    BR, didn’t you ask me for a king cake icing recipe last year? Well, this year’s cake was late, but I did ice it, and I’m really happy with how it came out.

    Simple Lemon Icing:

    2 c powdered sugar
    1 Tblsp lemon juice
    3 Tblsp water

    Stir. (The powdered sugar basically implodes with the liquid. It’s fun. and it means you can make it in a 2 c measuring cup.) Pour over entirely cooled cake. It was probably still too runny, so I’m thinking of cutting down to 2 Tblsp water next time. I did it in 3 passes, letting each one dry (and the cake finish cooling. la) I almost think it stuck to other rounds of icing better than it did to the cake…

  • Woohoo, runny was always my problem, too, but I hadn’t thought about icing it in separate passes. I’ll have to give that a try next time! :o )
