  • so close, yet so far

     After this semester, I will:

    have completed my math masters

    need for my econ masters: 4 econ classes

    need for my math phd: 4 math classes (1 of which is a 1 hour readings course)

    oh AND
    pass the analysis prelim
    pass my comps
    30 thesis hours

    But the end of normal _coursework_ is in sight, which is a freaky freaky thing after over a decade as a full time college student.

  • Apple Cake - A found recipe

    1. 3/4 oil
    2. 3/4 c sugar
    3. 2 eggs
    4. 2 tsp vanilla
    5. 2 c flour
    6. 1 tsp baking soda
    7. 1 tsp cinnamon
    8. 2 1/2 c chopped apples

    mix 1&2, then add 3&4. then 5-7. Fold in 8, and baking for 40 minutes at 350 degrees.

    Original recipe had only 1/4 c oil, and included chocolate chips. The taste is a little off. I'm thinking of using just 1 tsp vanilla next time. Or maybe making it in an 11x7 sheet pan and doing kind of a streusel coffee cake topping.

  • brain fried

    Math stat final was this morning. Now my hardest class is over and my awesome teacher can spend the last month of her pregnancy in peace. :)

  • Quick Baking update

    Madeleines - the power of the egg never ceases to amaze me. (There's no rising agent, but you beat so much air into the eggs that it heats up in the oven and they come out light and fluffy.) I made them in muffin tins, worked fine. They didn't even need the muffin liners. The only thing that bugs me is that after zesting, we are left with an unwanted, skinned lemon. Ideally, I'd like some magic way to get the zest without the lemon, but I'd settle for ideas for what to do with the lemon.

    These are hanging on as the household default brownies. They even work well with ice cream topping caramel swirl. (For which I think I owe a great big THANKS to Kat. )

  • Baking update

    1. Hypocrite Pie:

    • my basic lard based crust is still totally awesome (urm, that is: Bernard Clayton's Basic Crust from the Complete Book of Pastry)
    • my apples were not shy - they floated right up to the top.
    • the custard didn't quite jell. Maybe I should have not poured the butter/juice mix from the frying pan in with the apples? It looked too yummy to leave out.

    Overall it was really good, if not quite as neat and pretty as expected. Lasted ~24 hours with only two eaters. I will probably make it again in a few weeks.

    2. Apple Scones:

    Scones can do no wrong. Make more scones. Eat more scones. Nom nom nom.

  • We're up two rounds of "apple bits on top of random pastry" and the apple parts of these were yummy both times, but neither time did they make me shout "Eureka!" This weekend I'm planning to do scones with apple bits and hypocrite pie. I even got lard last week in preparation for pie crust season.

    And I have a request for madelines. You know, like in Transporter. (that's all I know about them so far. I bet I can make trial attempts in muffin tin though.)

    In other news, Shiner Bock has retaken its title as my default beer of choice. It's cheaper than the local microbrews, and I've always liked it better than Fat Tire.

    3. maybe stare at my queue and demand "why do you not give expected results, crazy thing?!"
