  • Monday Night Baking

sometimes, the need for cookies provides the energy to make cookies possible

    whole wheat s'more cookies

Not as good as regular chocolate chip cookies. But pretty good. They do succeed at having a faintly graham cracker taste. I did leave out the mini marshmallows and nuts, because I don't just have those things on hand. The real baking break through is that I have actually started using the suggested scoop size (those 1/4 cup cookies changed everything!) A rounded tablespoon is much bigger than I would have guessed.

(My nod to high altitude is that I cut the bake time by 1 minute. High altitude makes the baking soda work faster.)

  • Pear and Raisin Crumble

Easy (don't give up on the topping - it will become all moist. I got bored with it and was going to give in, so N finished it for me)

    Yummy.

Somehow, I got a free Bon Appetit subscription. We're enjoying it.

  • a friday with nothing scheduled

I wonder if that will help or hinder getting things done.

Monday: read 2-3 articles related to scheduling volunteers. I'm thinking glance through the last technical book I have lying around and find some more squidgy ones that tell me things like "x% of volunteers don't show up"

    Tuesday: big econ paper

Thursday: math stat hw and another econ paper

Extra: catch up with discrete math modeling.

  • King Cake

BR, didn't you ask me for a king cake icing recipe last year? Well, this year's cake was late, but I did ice it, and I'm really happy with how it came out.

    Simple Lemon Icing:

    2 c powdered sugar
    1 Tblsp lemon juice
    3 Tblsp water

Stir. (The powdered sugar basically implodes with the liquid. It's fun. and it means you can make it in a 2 c measuring cup.) Pour over entirely cooled cake. It was probably still too runny, so I'm thinking of cutting down to 2 Tblsp water next time. I did it in 3 passes, letting each one dry (and the cake finish cooling. la) I almost think it stuck to other rounds of icing better than it did to the cake...

  • German Food Adventure

So I was craving German food, particularly wiener schnitzel, and as you may have noticed, I don't do any actual cooking.

Luckily, my husband is GREAT at it. Last night he tried two new recipes, wiener schnitzel and potato salad. (Whoa, paywall. How bout that.) They both came out wonderfully! The only thing we might change is more green beans in the potato salad, so that it feels more like it covers the veggie side.

(We finished up with Chocolate Truffle Cakes - unglazed because they are already quite rich enough, thanks.  I only had about 4 oz. of baking chocolate left, so I filled it out with ancient hershey's kisses, some super dark chocolate that I didn't enjoy eating, and dove dark promises. The little food scale is handy. )

  • oh my

    1. Monday - Math clinic report 1 due, with accompanying presentation (we're meeting at 10 today)
    2. Tuesday - Math Stat Hw 2 due
    3. Thursday - Math Stat Hw 3 due, must have another econ paper read

If we can really bang out the clinic report today, then it shouldn't be TOO bad.

  • new cookie recipe

A strange takeoff of ANZAC biscuits, these cookies taste eerily like Cracklin' Oat Bran cereal. Googling to find the cereal name led me to find out that Kellogg's has protein water. Freaky.

The dough looks very dry - but it seems to work well if you pack it together. I had already decided to make giant cookies like the chocolate chips from a few weeks ago, so I lowered the temp by 25 degrees and packed the dough into a 1/4 c measuring cup. (and upped the cook time by 2-3 minutes.) I can't imagine that it would have stayed together if I'd just dumped heaping teaspoonfuls.

I am really tempted to add two eggs (which brings it up to about the liquid/dry ratio of choc chip) (or an egg and a yolk to follow the giant choc chip recipe) and see what happens.

  • slightly new method

    In order of deadlines:

    1. annotated bibliography for math clinic. (monday)
    2. read papers for econ (tues/thursday)
    3. be ready to force group into being useful (wed) (Thanks Harvey for setting aside a class period for group meetings the one week I desperately need you to.)
    4. group project 1 for math clinic (next monday)
    5. math stat homework (next tues)

Yet I still think I better get math stat out of the way if possible - maybe make first pass in case it takes several. I don't want to have two completely new math stat homeworks to do next weekend.

That class period for group meetings is really going to save my bacon this week.

  • BUT

Rugelach filled with Solo Raspberry pastry filling - awesome!

(I made the dough weeks ago, and have just been keeping a disc in the fridge. I think the dough is marginally more likely to split when rolling out after sitting in the fridge for weeks, but it means I can go from "I want rugelach" to eating in < 30 minutes.)

Thanks to Glinda for the canned filling suggestion!
